Angel Hair Nests with Olive "Eggs"

Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!





Candied Orange Walnuts

These not only make a great snack, they add a special touch to side dishes like green beans or sweet potatoes. It is really important to use freshly squeezed orange juice for the best flavor and to make sure the orange syrup is the right consistancy. These walnuts also make a great gift and store well in a tightly sealed container.

2 cups sugar
1/2 cup freshly squeezed orange juice
1 teaspoon orange extract
4 cups walnut halves

Bring the sugar and juice to a rolling boil and boil for one minute. Add the extract and walnuts. Stir well until evenly coated. Pour the walnuts onto wax paper and let sit until dried to the touch before packaging or serving.

Makes about 5 cups nuts.

Cooking Time: 5 minutes
Drying Time: 30 minutes
Total Time: 40 minutes
