Easy Lentil Dip
This very healthy and low fat dip is very easy to make and stores very well. It is always popular with pita slices, crackers, homemade potato or eggplant chips, or baguette slices.
2/3 cup favorite color lentils
1 3/4 cup chicken stock
2/3 cup plain yogurt
1 clove garlic
salt and pepper
Simmer the lentils and stock until all of the stock has been absorbed and the lentils are tender. Cool the lentils then process in a blender or food processor with the remaining ingredients until smooth and creamy.
Makes 6 servings.
