Flourless Chocolate Cake with Whipped Cream and Raspberries

Flourless Chocolate Cake with Whipped Cream and Raspberries

Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.

Watermelon Daiquiris

One of the most refreshing summer drinks imaginable, these daiquiris are to die for! Sweet, fruity, and packed with flavor, their brilliant color makes them a popular drink at all my parties. The watermelon can be purchased frozen or else you can simply freeze your own a few hours before your party. The frozen melon stores well and I frequently buy a lot of watermelon at the height of watermelon to freeze just to make this drink.

4 cups frozen watermelon cubes
1/2 cup light rum
1/4 cup freshly squeezed lime juice
1/4 cup Triple Sec liqueur
2 cups ice cubes

Combine the watermelon, rum, Triple Sec and lime juice in a blender and process until smooth, scraping down the sides occasionally. Add the ice in batches and process until smooth. Serve in chilled glasses.

Makes 4 servings.

Preparation Time: 5 minutes
