Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.





Watermelon Salsa

Everyone always looks at this dish skeptically when I tell them that it is a salsa made from watermelon, but they are always pleasantly surprised. I like the mixture of sweet and hot flavors…and I make it plenty hot. If you would prefer a milder salsa, reduce the amount of peppers, or use all jalapenos. This is a favorite with chile-lime flavored tortilla chips or grilled red snapper. It is also great over simply prepared chicken or other types of assertive seafood and fish.

3 cups diced watermelon
1/2 cup finely diced bell peppers
1/4 cup sliced scallions
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro
2 tablespoons minced jalapenõ peppers
1 minced scotch bonnet or habanero pepper

Combine all of the ingredients in a small bowl. Cover and refrigerate for at least an hour and up to 6 hours before serving. Stir before serving.

Makes about 4 cups.

Preparation Time: 10 minutes
Chilling Time: 1 hour
Total Time: 1 hour, 10 minutes
