This salsa is a favorite for serving with grilled fish, shellfish, chicken, and pork during the summer. The combination of ingredients is surprisingly good and very easy to throw together.
3 cups coarsely chopped cantaloupe
1 cup chopped red onion
1/3 cup chopped fresh cilantro
3 tablespoons olive oil
Freshly squeezed juice of one lime
2 minced seeded jalapeņo chiles
Freshly ground black pepper
Toss all of the ingredients together and let sit at room temperature for 15-30 minutes before serving.
