Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.





Cucumber Melon Soup

The combination of cucumbers and melon have become very popular in cuisine recently…you can even by cucumber melon perfume and candles. Personally, I think they are at their best combined together in this wonderful and easy chilled soup. This lowfat and low calorie soup is an excellent first course, dessert, or even light lunch or dinner served with a crisp salad.

2 cups chopped honeydew
2 large chopped cucumbers
8 ounces plain non-fat yogurt
2 tablespoons fresh lime juice
Salt
Freshly ground white pepper

Combine all of the ingredients in a food processor or blender. Puree until smooth. Pour the mixture through a sieve to strain out any chunks of seeds and peel. Taste and season adjust seasonings if necessary. Cover and chill the soup for at least 30 minutes and up to 5 hours before serving.

Makes 4 servings.

Preparation Time: 10 minutes
Chilling Time: 30 minutes
Total Time: 40 minutes
