Roasted Corn and Garlic Couscous|

1 head garlic, broken into individual cloves
2 tablespoons olive oil
2 cups fresh or frozen corn kernels
1/2 teaspoon salt, divided
1 3/4 cups chicken broth
1/4 teaspoon black pepper
1 1/4 cups uncooked couscous
1/4 cup chopped green onions
Preheat oven to 425 degrees. Wrap each garlic clove in a small piece of foil. Place the corn on a large roasting pan and toss with the olive oil and half the salt. Place the garlic on the pan. Bake for 15 minutes, stirring the corn every few minutes and flipping over the garlic occasionally. Remove from the oven. Unwrap the garlic and remove the husk. Chop the garlic and place in a large pot with the rest of the ingredients, including the corn. Bring to a boil. Remove from heat and let sit at room temperature covered for 5 minutes. Fluff with a fork before serving.
