16-ounce package frozen raspberries, thawed
3/4 cup sugar
4 teaspoons cornstarch
3-ounce package raspberry gelatin
2 red grapefruit, peeled and sectioned
9-inch baked pastry pie crust
Smash the berries in a medium pan. Add the sugar and cornstarch. Bring to a boil and cook for one minute. Remove from the heat. Add the gelatin and stir well until it dissolves. Chill 20-30 minutes. Fold in the grapefruit. Pour into the pie crust. Chill for 2 hours. Top with the whipped topping before serving.
