Turkey Sandwiches with Spinach Aioli
This recipe is part of Linda Larsen's Elegant Sandwiches article.
Aioli is simply garlic-scented mayonnaise. The spinach adds a fresh flavor and pretty color.
2/3 cup mayonnaise
1 - 3 tablespoons chopped roasted garlic from jar
1 tablespoon minced green onion
1/2 cup frozen chopped spinach, thawed and well drained
1 tablespoon lemon juice
Combine all ingredients and blend well. Makes enough for 8 sandwiches.
For each sandwich:
Crusty whole grain bread or rolls
Fresh baby spinach leaves
Havarti cheese
Sliced tomatoes
Cooked sliced chicken or turkey breast
Assemble just before serving.
