Jell-O Shooters

What would summer be without shooters? Simple to make and very popular at parties these are fun treats to serve at a party. They are potent, so you need to watch consumption, especially if you are serving other drinks. They do not taste like alcohol, so great care needs to be taken when making these around children…they have been known to eat them. I rarely use brand names in my recipes, but the results using Jell-O brand gelatin are superior to those made with other brands of flavored gelatin.

6 ounce package Jell-O
2 teaspoons unflavored gelatin (1 envelope)
2 cups boiling water
1 1/2 cup vodka
2/3 cup cold water
1/2 teaspoon fruit or vanilla extract* (optional)

Mix together the Jell-O and gelatin in a medium bowl. Add the boiling water and stir well until the gelatin is dissolved. Add the vodka, cold water, and extract and mix well. Pour into a 9 inch square pan or into individual shot glasses. Cut into squares when firm.

*The extract is optional, but really does give a little bit of a boost to the shooter flavor. Which, to be honest you only notice in the first one or two…after that you don't notice much of anything…Pair your extract with your Jell-O flavoring, using either the same flavor, or a contrasting flavor. Vanilla and almond work well with almost any flavor.

Makes 36 shooters.
