Curried Shrimp Salad|
This recipe is part of Linda Larsen's More Summer Salads article.
Lots of people will think this is a rice salad, but it's not. Orzo, or rosamarina, is a rice-shaped pasta. Try substituting chicken, turkey or ham for the shrimp for a flavor change.
1 12 ounce box orzo (rosamarina) pasta
1/2 cup mayonnaise
1/4 cup plain yogurt
1/4 cup low-fat mayonnaise
1/4 cup milk
1-3 tablespoons curry powder (to taste)
1/2 cup mango chutney
2 cups red grapes
1 cup celery hearts, chopped
2 cups medium shrimp, shelled and cooked
Chopped mango (garnish)
Toasted coconut (garnish)
Cook pasta according to package directions. Meanwhile, combine mayonnaise, yogurt, low-fat mayonnaise and milk; stir well. Add curry powder and chutney. Drain pasta, rinse briefly with cold water, and add to mayonnaise mixture. Stir in grapes, celery and shrimp. Chill well.
