Caramel Apple-Almond Crepes

A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.

Southwestern Vinaigrette

I make most of my salad dressings from scratch, and as we eat a lot of salad each week, I get to experiment a lot with a wide variety of flavors. This dressing is a favorite for taco salads, fajita salads, and other Tex-Mex inspired salads. If you do not have spicy ketchup on hand, use regular ketchup and add additional cayenne pepper to taste. My favorite use for this dressing is a simple salad of black beans, orange slices, and jicama.

2 teaspoons chili powder
1 teaspoon onion powder
1 teaspoon ground cumin
3 garlic cloves
Freshly ground black pepper
1/4 cup freshly squeezed lime juice
1/4 cup spicy ketchup
2 tablespoons white wine vinegar
1 1/2 tablespoons honey
1/4 cup olive oil

Mix together the spices, salt, and pepper in a small bowl. Add the garlic and crush to form a smooth paste. Add the lime juice, ketchup, vinegar, and honey and whisk until smooth. Add the oil in a drizzle and whisk until combined. Store in an airtight container in the refrigerator for up to two weeks. Shake or whisk before serving.

Makes about 1 cup dressing.
