Caramel Apple-Almond Crepes


A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.


Deep Kimchee Salad

I am not sure whether it is a regional thing or not, but a popular phrase in our area when one is in a lot of trouble is "She's in deep kimchee now!". I have a friend who is especially fond of this phrase, and this salad was created in his honor. Kimchee is an incredible melange of hot and sour pickled vegetables that is traditional in Korean cuisine. It is highly flavorful and very addictive. This simple salad combines kimchee with a selection of simple ingredients for a super salad that is easy to make. Kimchee can be found in many grocery stores and Asian markets. You can make it from scratch, but it is a laborious and very smelly process!

1 pound vermicelli pasta, cooked and well drained
2 tablespoons soy sauce
1 tablespoon mirin (optional)
1 tablespoon sugar
1/2 tablespoon sesame oil
1 bunch sliced scallions
2 cups coarsely chopped snow peas
1 cup shredded carrots
2 cups kimchee

Toss the warm pasta with the soy sauce, mirin, sugar, and sesame oil. Set the pasta aside and let cool to room temperature. Toss together the rest of the ingredients, then add to the pasta. Toss well to coat evenly with the sauce. Serve at room temperature or chilled if desired.

Makes 4 servings.
