Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.





Italian Cucumber Shrimp Soup

A favorite summer soup, this chilled classic whips up in minutes. Smooth and creamy and filled with flavor it is the perfect soup for a hot summer day or night. Best of all, it requires no cooking at all so your kitchen remains cool as a cucumber.

3 peeled and chopped English cucumbers
2 cups chicken stock
1 cup plain yogurt
1/2 cup creamy Italian dressing
1/2 pound coarsely chopped cooked shrimp
1/4 cup minced red onion
1/4 cup minced red bell pepper
2 tablespoons minced fresh Italian parsley
2 tablespoons minced fresh basil

Puree the cucumbers until very smooth in a blender or food processor. Add the chicken stock, yogurt, and Italian dressing and mix until very smooth. Stir in the remaining ingredients. Chill for at least 30 minutes, and up to 10 hours before serving chilled.

Makes 6 servings.

Preparation Time: 5 minutes
Chilling Time: 30 minutes
Total Time: 35 minutes
