Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.





Queso for the Masses

Carrie told us "I have friends who beg me to make this for parties and gatherings. It's a favorite." She also suggested that you "use diced cooked chicken instead of beef".

1 2 pound block Velveeta Processed Cheese
1 Family size can Bean with Bacon Soup
2 cans RoTel Diced Tomatoes and Chili (not drained, we need the juice!)
1 pound lean ground beef, browned and drained
1 tablespoon Tabasco sauce

Add all ingredients to large crock-pot set at high heat. Stir frequently until cheese is mostly melted. Reduce heat to low, stir occasionally until time to eat. Serve with tortilla chips.

Makes: A huge vat of cheese dip

Time: about 15 minutes prep time, then a little stirring once it's all in the pot
