Minted Cucumber Salad
My favorite salad for a hot summer day, we eat this salad a lot all summer long. It is especially perfect for picnics and other occasions when make ahead dishes are required. Mint and cucumber really do go together well...don't be afraid of the combination.
1 large English (seedless or burpless) cucumber, peeled if desired
1 cup plain low fat yogurt
1/2 cup rice vinegar
1/2 cup chopped fresh mint leaves
2 tablespoons sugar
Slice the cucumber into thin circles. In a medium bowl, mix together the yogurt and vinegar until smooth. Add the mint, sugar, and cucumber and toss well to coat. Serve at room temperature or chill up to 8 hours before serving, tossing well first.
Makes 6 servings.
