Angel Hair Nests with Olive "Eggs"

Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!





Grilled Green Tomatoes

Fried green tomatoes are a classic favorite, but only are they tastier prepared on the grill, they are a lot lower in fat and calories. We always have green tomatoes in the garden, and these make for a special treat all summer long. I typically make them in advance for big parties and pile them on baking sheets. Before serving I reheat them in a 350 degree oven until hot.

2 eggs
2 tablespoons heavy cream or half and half
1/2 cup flour
Salt
Freshly ground black pepper
1/2 cup freshly grated Parmesan cheese
1/3 cup cornmeal
2 tablespoons minced fresh basil
2 tablespoons minced fresh parsley
4 large green tomatoes

Arrange three flat bowls or pie plates on a work surface. Beat the eggs and cream in one bowl. Add the flour to another and season with salt and pepper. Mix together the cheese, cornmeal, basil, parsley, and salt and pepper to taste in the last bowl. Slice the tomatoes into 1/4 inch slices. Taking one slice at a time, dip into the flour mixture first and then into the egg mixture. Dip the slice into the cheese mixture and toss well to coal evenly. Place the coated slice on a sheet of aluminum foil or a large plate. Repeat with the remaining slices. Grill the tomato slices over medium heat for 4-5 minutes on each side, or until golden brown.
