Grilled Salmon with Mustard Dill Sauce
Salmon is one of the best tasting fish to serve off the grill, and this wonderful sauce really complements the flavor. Best of all, it is quick and easy to prepare and the sauce can be made well in advance. Make sure to oil your grill liberally before adding the salmon, as salmon (and all fish) tends to stick to the grill rack and fall apart. If you are in a hurry and want a super fast dinner, simply add a bit more dill, mustard, and lemon juice to intensify the flavor and serve immediately.
1/2 cup mayonnaise
1/2 cup sour cream
3 tablespoons minced fresh parsley
2 tablespoons Dijon mustard
2 tablespoons minced fresh dill
2 teaspoons freshly squeezed lemon juice
Freshly ground black pepper
Salt
6 5-6 ounce salmon fillets
3 tablespoons olive oil
In a small bowl mix together the mayonnaise, sour cream, parsley, Dijon mustard, dill, lemon juice, plenty of black pepper, and salt to taste. Cover tightly and chill for at least 3 hours before serving. (Sauce can be made up to 36 hours in advance.) Brush the salmon fillets with the olive oil and salt and pepper to taste. Place on a liberally oiled grill about 4 inches from hot coals and cook for 4 minutes on each side, or until the salmon is opaque in the center. Serve with the cold mustard dill sauce.
