Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.





Raspberry Bavarian

This delicate dessert is a very simple light ending to a meal. It is very easy to make and is very attractive when unmolded. A bit more sophisticated than traditional gelatin based desserts, it is elegant and low in fat and calories.

14 ounces thawed frozen raspberries (reserve liquid)
1 1/2 ounce package of sugar free raspberry gelatin
1 3/4 cups reduced fat evaporated milk
Fresh fruit and mint sprigs to decorate

Drain raspberries over a bowl and reserve juice. Add enough water to juice to make 1 1/4 cups. In a saucepan over low heat mix juice-water mixture and gelatin. When gelatin dissolves, remove from heat and set aside to cool. In a large bowl, beat evaporated milk until thick. Add raspberries and cooled gelatin mixture and mix well. Pour mixture into a glass serving bowl. Cover and refrigerate until set. Turn out mold onto serving plate and decorate with fresh fruit (fresh berries, sliced peaches, tangerine slices, etc).

Makes 6 servings

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Chilling Time: 2 hours
Total Time: 2 hours. 25 minutes
