Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.

"This is a perfect light dessert to end a summer meal. The key to its success is picking out peaches that are ripe (for maximum flavor and sweetness) but still retain their firmness."

16 peach halves - pitted
3 tablespoons sugar
Crème Fraîche - or sour cream

Preheat broiler. In a small shallow baking pan lined with foil, arrange the peaches cut side up. Sprinkle peaches with sugar and let stand 10 minutes. Broil 4 inches away from heat until slightly browned and tender (7 minutes). Serve warm with Crème Fraîche.

Total Time: 20 minutes
Baking Time: 7 minutes
Marinating Time: 10 minutes
Preparation Time: 3 minutes
