Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.





Minty Peaches and BrieMinty Peaches and Brie

"The almond and mint marinade/ dressing gives this fresh appetizer a Middle Eastern touch. This can also double as a light lunch."

4 peaches
1 cup mint leaves
1/4 cup sugar
2 tablespoons balsamic vinegar
1/8 teaspoon black pepper
2 tablespoons almonds - chopped
8 cups mixed greens
5 ounces Brie - cut in eighths
8 ounces French baguette slices

Blanch peaches (by first immersing them in hot water for 20 seconds and then in ice water). Peel and halve peaches (removing pits). In a blender, process mint and sugar until chopped. Add vinegar and pepper, process until well combined. Pour mixture into a medium bowl. Add almonds and peach halves. Cover and chill 4 hours. Remove peaches and reserve mint mixture. Distribute salad greens among 8 plates. Top with peach half and Brie wedge. Drizzle with mint mixture. Serve with baguette slices.

Makes 8 servings.
