Feta Baked Orzo

1 14-1/2 ounce can chicken broth
Salt and freshly ground pepper
1 pound orzo pasta
3/4 cup whipping cream
1/3 cup olive oil
1/2 pound good quality feta cheese, crumbled
2 tablespoons chopped fresh dill
1 garlic clove, minced
1/3 cup Romano or Asiago cheese
Pour broth into a medium large pot. Add enough water to broth to almost fill pot. Add salt and bring to a boil. Stir in orzo and boil until just tender but still firm to the bite, stirring occasionally. Drain well. Return to pot. Mix in cream, oil, feta, dill and garlic. Season with salt and pepper. Transfer to 1 1/2 quart baking dish. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before continuing.) Preheat oven to 350F. Sprinkle orzo with cheese. Bake until heated through, about 40 minutes.
