Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.





Fruited Coleslaw

This jazzed up coleslaw is quick and easy to prepare using prepared ingredients. The simple orange flavored dressing highlights the unusual combination of ingredients for a salad that goes wonderfully well with a variety of grilled dishes.

4 cups shredded cabbage
1 cup shredded carrots
1 chopped large tart apple
1/2 cup golden raisins
11 ounces mandarin oranges, drained with juice reserved
1/2 cup mayonnaise
1 tablespoon apple cider vinegar
1/2 teaspoon celery seed
Salt
Freshly ground black pepper

Toss the cabbage, carrots, apple pieces, raisins, and orange segments in a large bowl. In a small bowl mix together 2 tablespoons of the reserved orange juice (and discard the rest), mayonnaise, vinegar, celery seed, salt, and pepper until smooth. Toss the dressing with the cabbage mixture. Cover and refrigerate for at least an hour before serving.

Makes 8 servings.

Chilling Time: 1 hour
Total Time: 1 hour, 10 minutes
