Caramel Apple-Almond Crepes


A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.


Grilled Lake Trout

"With delicate meats, often we prefer to keep the recipes simple by adding only complementing flavors while allowing the meat to express its true flavor. Otherwise, people taste the spices and herbs rather than the meat itself. If you are unsure about how to handle the trout on the grill without feeling like you will destroy the product before reaching the dinner plate, you might want to consider purchasing a grilling fish basket. The fish will rest comfortably in the basket while you turn it over without any detrimental effect on your presentation!"

Prepare each trout in the following manner:

Clean and pat dry. Rub a generous amount of olive oil both inside and out. Sprinkle with salt. Sprinkle with fresh black pepper. Place 1 tablespoon butter inside cavity. Sprinkle with dill. Make sure your grill is hot. Take a paper towel, roll it up and soak it in some cooking oil (not dripping). With a pair of tongs, rub the oil on the hot grates. TIP: The grates must be hot or the fish will not release from the grates and turn easily. Place the trout on the grate and cook until the meat flakes gently. With one or two spatulas, gently turn the fish over and cook the other side. When done, remove, add fresh squeezed lemon juice and serve.
