Smothered Chicken
Recipe submitted by Georgia.
4 boneless chicken breasts
Garlic Salt
Coarse seasoned pepper
1 large sweet onion
1 large green pepper
1 large red pepper
1 large yellow pepper
1- 8 ounce can mushrooms (drained)
8 ounces shredded provolone cheese
8 ounces shredded mild cheddar cheese
In a 350 degree oven, place chicken breasts on an ungreased cookie sheet. Season with garlic salt and seasoned pepper and bake uncovered for about 30 minutes. Brown the chicken, but DO NOT brown too much to dry out. While you are baking the chicken, slice all the peppers and onion and place in a frying pan with NO margarine or oil. Put on medium heat, place lid on and let simmer until the vegetables are all limp (but not too overcooked). Add the mushrooms and cook about 15 minutes longer. Shut off heat and set aside. When chicken is ready, remove from cookie sheet and place in large baking dish. Put peppers, mushrooms, and onions on top of each chicken breast evenly. Sprinkle the provolone and cheddar on top as well. Return the baking dish to the oven and bake for an additional 10 to 15 minutes or until the cheese is nicely melted. At this time, cover lightly with foil, turn off the oven and let sit until you are ready to serve.
