Caramel Apple-Almond Crepes


A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.


Asiago Garlic Orzo Pilaf

Rice pilaf can sometimes take over an hour to prepare. This speedy recipe is not only healthier than most traditional pilafs which are laden with fatty cheeses and butter, we think it has more flavor and is easier to handle as part of a full menu. Any small pasta can be used in place of the orzo, which is a small rice shaped pasta. Asiago cheese is a hard aged cheese similar to Parmesan, but which is a bit milder in flavor and which is lower in fat and calories. Parmesan or Romano cheese can also be used with excellent results.

3 cups low-sodium chicken broth
3/4 pound orzo
5 minced garlic cloves
1 cup grated Asiago cheese
salt to taste
freshly ground pepper to taste

Bring the broth to a boil over high heat in a large heavy saucepan. Add the orzo and garlic and reduce the heat to medium high. Briskly simmer uncovered for about 7-8 minutes, stirring occasionally, or until the pasta is tender, and most of the broth has been absorbed. Turn the heat off, but leave the pan on the stove. Add the cheese and mix well. Season to taste with salt and pepper, remembering to taste first as the Asiago can be very salty. Serve warm.
