Herbed Cheese and Vegetable Chicken
One of our all time most requested and favorite recipes, this dish was made for busy moms. It is also perfect for busy dads, or even older children as it is quite easy to prepare. Boursin cheese is simple a soft herbed cream cheese. Softened cream cheese and your favorite herbs can be used instead.
2 tablespoons olive oil
1 large bunch scallions
2 diced red bell peppers
3 minced garlic cloves
Salt
Pepper
8 ounces Boursin cheese (regular or low fat)
6 boneless skinless chicken breasts
Heat the oil in a large heavy frying pan. Add the scallions and bell pepper and cook for 3 minutes, or until softened. Add the garlic and cook for another 2 minutes, stirring frequently. Turn the heat off, but leave the pan on the burner. Season to taste with salt and pepper and toss to combine. Add the Boursin and gently toss until the cheese is melted and a smooth sauce is formed. Place the chicken breasts in an oven proof baking dish. Spread evenly with the cheese mixture. Tightly cover with plastic wrap and refrigerate up to 24 hours before baking. Preheat the oven to 425 degrees. Let the chicken come to room temperature while the oven is heating. Bake for 20-25 minutes or until the chicken is cooked through, but still very moist. Serve hot.
The chicken can be baked immediately after spreading the cheese mixture on the breasts. Simply bake for 18-20 minutes, or until the chicken is thoroughly cooked. This recipe adapts well, and your favorite vegetables, such as asparagus, broccoli, green peppers, or peas work well with the chicken and cheesy sauce.
