Breakfast Puff
Kind of a mixture between a plain quiche, soufflé, and scrambled eggs this breakfast dish is quick and easy to prepare…and to quote my husband "Not filled with any of that weird stuff you like to throw in your eggs." This dish is excellent for purists like my husband, or when you want a very basic, quick, and easy dish to serve on a buffet along with a selection of more flavorful dishes.
1 cup shredded Cheddar cheese
12 eggs
1 cup heavy cream
1 teaspoon dry mustard
Salt
Pepper
Preheat the oven to 325 degrees. Lightly grease a 9x13 inch baking pan. Sprinkle cheese evenly in the bottom of the pan. In a large bowl, beat together eggs, cream, mustard, salt and pepper. Pour egg mixture on top of cheese. Bake in the preheated oven for 40 minutes or until firm. Let cool slightly before cutting into squares to serve.
Makes 6 servings.
