Angel Hair Nests with Olive "Eggs"

Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!





Smoked Ham and Cream Cheese Scrambled Eggs

These savory scrambled eggs are quick and easy to make, but their bright mix of colors and creamy texture make them a nice change from normal breakfast fare.

1 tablespoon butter
6 eggs
1/4 cup heavy cream
4 ounces cubed smoked ham
1 chopped scallion
Freshly ground pepper
3 ounces cream cheese, cubed
Salt

Melt the butter over medium heat in a large heavy skillet. In a medium bowl beat the eggs and heavy cream until well blended. Add the ham, scallion, and pepper and mix well. Pour into the hot pan and cook, stirring often until the eggs are set, but still very moist. Sprinkle the cream cheese over top and continue to cook, stirring often, until the eggs are fully cooked. Salt to taste and serve hot.

Makes 4 servings.
