Angel Hair Nests with Olive "Eggs"

Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!





Crab and Cream Cheese Baked Eggs

There are thousands of different delicious combinations for scrambled eggs, but this one is truly one of my absolute favorites. I like to save it for festive brunches and serve it with cucumber salad and dilled roast potatoes…but also enjoy it at other times when I want an easy to prepare lunch or dinner. Very similar to a crustless quiche, this dish is excellent served plain or with sour cream.

9 eggs
1/2 cup milk
8 ounces cubed cream cheese
6 ounces lump crabmeat, cartilage removed
Salt
Freshly ground black pepper
1/4 cup melted butter
1 tablespoon chopped fresh dill

Preheat the oven to 350 degrees. Beat the eggs and milk together in a large bowl until light and fluffy. Fold in the cream cheese, crab, and salt and pepper to taste. Grease a 7X12 inch casserole dish with the melted butter. Pour the egg mixture into the pan. Sprinkle the dill over the top. Bake for 30 minutes. Serve hot.

Makes 8 servings.

Total Time: 35 minutes
