Angel Hair Nests with Olive Eggs

Angel Hair Nests with Olive "Eggs"

Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!

Make Ahead Baked French Toast

A favorite among busy cooks, this easy baked version of French toast can be made the night before and then simply baked in the morning with no mess and no fuss. It is perfect for lazy mornings when you just want to relax with some coffee and the morning paper. This recipe can be doubled or tripled, making it perfect for brunches or feeding large numbers of guests (especially slumber parties!). For a lighter French toast, milk and egg alternatives can be used in place of the cream and eggs. This French toast is fabulous with syrup, fresh fruit and whipped cream, or your favorite fruit sauce.

6 large eggs
1 cup heavy cream
1/4 cup real maple syrup
3 tablespoons brown sugar
2 teaspoons pure vanilla extract
pinch salt
8 slices thick firm bread

Beat the eggs until thick and lemon colored in a large square baking dish. Add the cream, maple syrup, brown sugar, vanilla, and salt and mix until well blended. Toss the bread in the egg mixture until well coated and most of the liquid has been absorbed. Stack the bread in the pan and cover tightly. Refrigerate overnight. Preheat the oven to 400 degrees. Place the bread slices on a large greased baking sheet. Bake for 10-15 minutes, or until golden brown, flipping partway through. Serve hot.

Makes 4 servings.
