Breakfast Potato Pancakes
These simple pancakes have always been a traditional favorite to serve the morning after a holiday dinner where we had extra leftover mashed potatoes. Plain leftover mashed potatoes are notoriously un-exciting...but these pancakes are wonderful. Try them with crumbled bacon, sausage, salmon, chopped vegetables, or your other favorite breakfast ingredients mixed in for a nice change.
2 cups mashed potatoes
2 tablespoons flour
1 egg
Salt
Pepper
3 tablespoons butter
Melt the butter in a large heavy skillet. Beat together the mashed potates, flour, egg, and salt and pepper to taste. Drop the potato mixture by the 1/3 cupful onto the hot skillet and cook for 3-4 minutes or until golden brown. Flip, and cook for an additional 3-4 minutes. Serve hot.
Makes 4 servings.
