Endive Salad with Warm Bacon Dressing |

8 slices bacon
2 eggs - beaten
2 teaspoons salt
1/2 cup sugar
1/2 cup vinegar
1 cup water
2 hard boiled eggs
2 teaspoons cornstarch
1 head endive
Tear endive apart, wash and spin dry. Place in a large serving bowl. Slice hard
boiled eggs and lay slices over top of the endive. Set aside. Fry bacon until crisp, then break or cut into bits. Set aside. Mix the 2 beaten eggs, vinegar, salt, sugar, and cornstarch together in a saucepan. Whisk and cook over medium heat until slightly thickened. Stir in bacon bits. Pour over endive.
