Angel Hair Nests with Olive Eggs

Angel Hair Nests with Olive "Eggs"

Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!





Endive Salad with Warm Bacon Dressing

8 slices bacon
2 eggs - beaten
2 teaspoons salt
1/2 cup sugar
1/2 cup vinegar
1 cup water
2 hard boiled eggs
2 teaspoons cornstarch
1 head endive

Tear endive apart, wash and spin dry. Place in a large serving bowl. Slice hard boiled eggs and lay slices over top of the endive. Set aside. Fry bacon until crisp, then break or cut into bits. Set aside. Mix the 2 beaten eggs, vinegar, salt, sugar, and cornstarch together in a saucepan. Whisk and cook over medium heat until slightly thickened. Stir in bacon bits. Pour over endive.
