Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.





Strawberry Butter

This strawberry flavored butter is excellent on your favorite baked goods, waffles, pancakes, or even plain toast. It is simple to make and stores well in the refrigerator for about a week. Fresh or thawed frozen strawberries can be used with great results. If your strawberries are not very sweet, you may need to add more powdered sugar to taste.

1 cup softened butter
3/4 cup crushed strawberries
2 tablespoons powdered sugar
juice of one lemon

Place the butter in a medium bowl and beat until light and fluffy. Add the strawberries, powdered sugar, and lemon juice. Beat until well blended. Spoon into an airtight decorative container and store in the refrigerator until ready to serve.
