Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.





Flan

"We have been making this recipe for years in my family. It is simple and is the best flan in the world!"

8 eggs
1 (14 ounce) can sweetened condensed milk
2 teaspoons vanilla extract
1 1/2 cups white sugar

Preheat the oven to 300 degrees. Beat together the eggs, condensed milk and vanilla and blend until smooth. Place a nine inch cake pan near the stove. Cook the sugar in a medium heavy pan, stirring constantly until it is liquid and golden brown. Immediately pour into the cake pan. Pour the custard mixture over the browned sugar. Place the cake pan in a large roasting pan. Fill the roasting pan with boiling water to reach halfway up the outside of the pan. Don't get any water in the flan. Bake for 70 minutes or until a knife inserted in the center comes clean. Let cool completely. Unmold from the pie pan and serve at room temperature or chilled.

Makes 8 servings.
