Angel Hair Nests with Olive "Eggs"

Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!





Peach Daiquiri

Oh no, now everyone will know my little secret. I am a huge sucker for Peach Daiquiris…they are most definitely my beverage of choice. Here is my favorite version. Trust me when I say I went through a lot of testing to develop just the perfect recipe. When peaches are beautiful and ripe I use fresh peaches, the rest of the time, when supermarket peaches are scary, I use frozen peaches with excellent results as described below.

1 cup frozen peaches
1/4 cup lime juice
1 1/2 ounces light rum
1 ounce peach schnapps
1/2 ounce apricot brandy
Dash of pure vanilla extract
1 tablespoon superfine sugar
1 cup crushed ice

Combine the peaches, lime juice, rum, schnapps, brandy, vanilla, and sugar in the blender until smooth. Slowly add the ice with the blender running and process until smooth. Serve in a chilled glass.

Makes 1 serving.

Total Time: 5 minutes
