Puebla Green Beans
This is a very simple dish with a nice flavor that adds a different touch to plain green beans. If you do not have access to yellow tomatoes, just substitute a red plum tomato. Use care when mincing the chiles, wear
gloves and do not touch your eyes, mouth, or skin with your gloved hands.
1 medium onion, diced
1 tablespoon minced chiles (or to taste)
2 large minced garlic cloves
3 tablespoons vegetable oil
20 ounces frozen green beans
1 yellow tomato, coarsely chopped and seeded
1/4 cup vegetable broth or water
salt and pepper
In a medium saucepan, sauté the onion, chiles, and garlic in the oil until the onion is translucent. Add the beans, tomato, and broth and cook over medium heat until the beans are tender. Season to taste.
