This is one of my favorite salsas. It is refreshing and different. Try it with simply grilled chicken, fish, or seafood. We also love this salsa plain with tortilla chips.
1 can crushed pineapple in juice
1/2 cup minced red bell pepper
1/2 cup minced green bell pepper
1 tablespoon minced scallions
2 minced shallots
2 teaspoons minced cilantro
1 minced jalapeno pepper
1 teaspoon grated lime peel
juice of 1 lime
Reserve 1/3 cup of pineapple juice and use the rest in another dish
or as a drink. Mix the remaining ingredients and chill for 24 hours.
Makes 6 servings.
