Easy Chicken Mole
This next recipe offers a somewhat similar taste to a classic mole sauce. It does not have the depth or flavor of a traditional mole, but it does not take hours to prepare or use hard to find ingredients. 1/4 cup peanut butter can be substituted for the almonds if desired.
1 tablespoon canola oil
1/2 cup minced onion
4 minced garlic cloves
6 boneless skinless chicken beast halves
16 ounces tomato puree
1/2 cup salsa
1/4 cup ground almonds
2 tablespoons crushed sesame seeds
4 teaspoons unsweetened cocoa
1 teaspoon cumin
1 teaspoon Mexican oregano
1/8 teaspoon nutmeg
1/8 teaspoon allspice
salt
freshly ground pepper
Heat the oil in a large heavy skillet. Add the onion and sauté for 4 minutes. Add the garlic and chicken. Sauté the chicken for 2 minutes on each side, or until lightly browned. Add the remaining ingredients. Bring to a boil, then reduce the heat and simmer for 10 minutes. Continue to cook the sauce until the chicken is cooked through. Once the chicken is thoroughly cooked, remove it from the sauce and place on a warm platter. Continue to cook the sauce for a few minutes more, or until it has thickened. Serve hot over the chicken with rice.
