Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!





Open Faced Apple Cream Cheese Muffins

This is actually a recipe that I developed for a cooking class for children. But the husband of a friend of mine discovered it and claimed it was the perfect recipe for husbands to make on Mother's Day or anniversaries. So if you are a less than confident cook, or want something quick and easy, try this simple but tasty recipe. Recipe may be easily multiplied. I personally love this recipe with a little bleu cheese mixed with the cream cheese instead of the brown sugar for a more savory treat.

2 split English muffins
2 tablespoons cream cheese
1 tablespoon brown sugar
1 large tart apple, cored and thinly sliced
1 teaspoon sugar
Pinch cinnamon
2 teaspoons butter

Preheat the broiler. Place the English muffins on a cookie sheet. In a small bowl mix together the cream cheese and brown sugar. Spread the mixture over the English muffins. Arrange the apple slices over the cream cheese mixture. Sprinkle with the sugar and cinnamon. Dot the apples with the butter. Broil for 5-7 minutes, or until the apples are golden brown and soft. Cool slightly and serve warm.

Makes 2 Servings.
