Angel Hair Nests with Olive "Eggs"

Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!





Campari Scented Grapefruit and Pomegranate Seeds

This easy and elegant fruit dish is great to prepare ahead of time. A variation of a dish I had first at a wonderful bed and breakfast, this dish can be made up to a whole day ahead of time and has a marvelous flavor and elegant appearance. Campari is an Italian wine that is marvelous with grapefruit. You can use a sparkling grape juice or even champagne, but the flavor is not the same. Do not add the pomegranate seeds ahead of time when making this dish. It only takes a second to sprinkle them over right before serving. Feel free to omit the pomegranate seeds, the dish is still fabulous. This recipe easily multiplies to serve larger parties and has become one of my favorite recipes to serve at bridal shower brunches.

1 tablespoon sugar
1 tablespoon Campari
1 large pink grapefruit
pomegranate seeds

In a medium bowl mix together the sugar and Campari. Peel the grapefruit. Section the grapefruit over the bowl holding the Campari mixture to catch any juice that might fall. Toss the grapefruit sections in the Campari mixture and refrigerate for at least one hour. Spoon into serving bowls and top with the pomegranate seeds before serving.

Makes 2 Servings.

Chilling Time: 1 hour
Total Time: 1 hour, 10 minutes
