Coconut Rice
Here is a favorite dish to serve with Asian inspired dishes. We especially adore it with spicy Thai dishes. Yum!
1 cup Basmati rice
3/4 cup water
1 cup coconut milk
Salt
White pepper
3 tablespoons butter
Combine the rice, coconut milk, water, salt, and pepper in a small saucepan. Bring the mixture to a boil, cover, reduce the heat, and then simmer for 10 minutes. Turn off the heat, but leave covered on the burner. Let sit for 10-15 minutes. Fluff with a fork, add the butter and adjust the seasonings if needed. Keep hot until ready to serve.
Makes 8 servings.

Cooking Time: 30 minutes
