Avocado and Arugula Salad|
The buttery smoothness of ripe avocado is mixed with the peppery taste of arugula in this simple salad. The simple dressing highlights the flavors of the arugula and avocado and makes this recipe very easy to prepare. I prefer Haas avocados in this recipe, but if you prefer the softer Florida avocados, they work very well too.
8 cups washed and shredded arugula
2 ripe peeled and cubed avocados
1/4 cup extra-virgin olive oil
2 tablespoons imported red wine vinegar
Freshly ground black pepper
Toss the arugula and avocado in a large bowl. Drizzle with olive oil and vinegar and season to taste with salt and pepper. Toss well and serve immediately.
