Caramel Apple-Almond Crepes


A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.


Popovers

When I was younger I used to love watching these bake. While they are traditionally served with a beef meal, this old-fashioned recipe works well with any meal. It is extremely important to heat the muffin tin before baking. This recipe does not double well, so if you need more than 12 popovers, make the batches separately. This recipe is very simple, but surprisingly addictive, so plan on making extra.

3 eggs
1 cup milk
1 cup flour
1/2 teaspoon salt
1 teaspoon sugar

Preheat the oven to 450 degrees. Heavily butter 12 muffin or popover cups. Place the muffin tins in the oven to heat while you mix the batter. Beat the eggs in a large bowl. Mix in the milk until well blended. Add in the dry ingredients and mix until the batter is just moistened. Carefully removed the tins from the oven and fill the cups 1/3 full. Bake in the hot oven for 15 minutes, or until the popovers have swelled above the rims of the tin. Reduce the heat to 350 degrees and continue baking for 15-20 minutes, or until the popovers are golden brown. Serve immediately.

Makes 12 popovers.
