Angel Hair Nests with Olive "Eggs"

Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!





Spiced Cranberry Pear Soup

Fruit soups are vastly underrated and underutilized. This beautiful light soup makes a wonderful beginning or ending to any meal. It can be served hot or cold as either an appetizer or dessert.

1 cup chopped cranberries
2 cups cranberry juice
3 ripe Bartlett pears, peeled and chopped
1/2 teaspoon ground cinnamon
1 teaspoons freshly grated nutmeg
2 thin slices fresh ginger
Crème Fraîche or plain yogurt (optional)

Simmer the cranberries in the cranberry juice for 10 minutes. Drain the cranberries, reserving the juice. Place the cranberries, pears, spices, and ginger in a food processor. Process until smooth. Slowly add the reserved juice with the motor running. Mix until the soup is well blended. Serve the soup warm or cold, adding a swirl of crème fraîche or yogurt if desired.
