Calico Wild Rice Soup
This attractive savory soup is low in calories and fat, making it the perfect starter for a healthy meal or light lunch. The brightly colored vegetable and nutty taste of the wild rice go together beautifully.
4 cups low fat chicken broth
2 cups cooked wild rice
1 cup frozen corn
2 tablespoons chopped red bell pepper
2 tablespoons chopped yellow bell pepper
2 tablespoons chopped green bell pepper
1/2 cup sliced green onions
1 small carrot, thinly sliced
1 tablespoon chopped fresh parsley
1 tablespoon fresh minced tarragon leaves
2 tablespoons cornstarch
2 tablespoons water
Combine all of the ingredients except for the cornstarch and water. Simmer for 7 minutes, or until the vegetables are crisp tender. Combine the cornstarch and water in a small bowl. Pour slowly into the soup, mixing well. Cook the soup for a few minutes more until it thickens slightly. Serve hot.
