Currant, Pine Nut, and Chevre Spread
This unique combination of ingredients, inspired by cheese balls sold in Paris delis, makes for a great easy appetizer. Serve with toasted baguette slices or your favorite crackers.
8 ounces Chevre or favorite soft goat cheese, softened
2 tablespoons Crème de Cassis liqueur
3 tablespoons dried currants
3 tablespoons chopped toasted pine nuts
Mix together the chevre and liqueur until smooth and creamy. Chill for an hour. Roll into a smooth ball. Place the currants and pine nuts on a plate or piece of waxed paper. Roll the chevre ball in the currants and pine nuts. Chill for at least two hours. Serve at room temperature or chilled.
