Duchess Potatoes
"This is my mom's recipe and she has been making them the same way now for over 20 years. No holiday would be complete without them. The recipe makes enough for eight with some leftover."

10 peeled and cubed Russet potatoes
1/4 cup butter
1/4 cup milk
Salt
Black pepper
2 well beaten eggs
2 tablespoons melted butter
Paprika
Boil the potatoes in salted boiling water for 15-20 minutes, or until very tender. Drain well and mash until very smooth. Mix in the 1/4 cup butter, milk, salt, and pepper. Let cool for 15 minutes. Preheat the oven to 350 degrees. Beat in the eggs until well blended. Pipe the potato mixture into 1 1/2-2 inch circles using a large star tip onto a lightly greased baking sheet. Drizzle lightly with the butter and sprinkle liberally with paprika. Bake for 15 minutes or until lightly browned.
