Dijon Pork Tenderloins

"I received this recipe a long time ago from a friend and have gradually adapted it to our tastes. It is wonderful…better than anything you can get in a restaurant and perfect for dinner parties."

Recipe Submitted by: Marnie

4 tablespoons butter, divided
2 tablespoon olive oil
12 pork tenderloins, pounded to 1/2 inch thickness
1/2 cup white wine
2 cups cream
1/3 cup Dijon mustard
Freshly ground black pepper

Melt 2 tablespoons of the butter and olive oil in a skillet. Saute the tenderloins until browned on both sides and cooked through. Remove to a plate and keep warm. Add the wine to the pan and cook over high heat until reduced by half. Add the cream and simmer for five minutes. Remove from the heat and whisk in the mustard, remaining 2 tablespoons butter, salt, and pepper. Once the sauce is smooth, pour over the tenderloins and serve hot.
