Caramel Apple-Almond Crepes

A great dish for dessert or breakfast, these filled crepes are quick and easy to make, full of wonderful flavor, and make any occasion special.

Triple Ginger Lemon Pears

This is an easy dish to make for elegant occasions, family dinners, or even when you want a light snack. It is extremely simple and easy to make and is always a very popular dish on buffets and parties. The zing of the ground ginger is nicely matched with the gingery sweet crunch of store bought or homemade gingersnaps and a dusting of crystallized ginger. This recipe can be doubled, or multiplied to make as many servings as you need. The pears can be baked a day in advance without the cookies and ginger and topping. Refrigerate until ready to serve, and then bake for ten minutes at 350 degrees after placing the cookies and ginger on top.

2 tablespoons honey
juice of 1 lemon
pinch ground ginger
2 peeled, halved, and cored pears
4 gingersnap cookies, crushed
1 teaspoon crystallized ginger, minced

Preheat the oven to 425 degrees. In a small shallow baking dish, mix together the honey, lemon juice, and ground ginger. Place the pears in the dish cut side down and liberally brush the honey mixture over the pears. Flip the pears over and brush the cut side of the pears with the honey mixture. Sprinkle the cookies over the tops of the pears and sprinkle with the crystallized ginger. Bake for 8 minutes, and brush with the syrup again. Bake for 10-12 minutes more, or until the pears are tender and the syrup has thickened. Serve hot or at room temperature.
